Selecting excellent primary materials is the first step, the most important one in fact, in creating unique pasta.
Olio di Oliva
De Cecco Olio di Oliva is a skilful blend of selected refined oils with the excellent De Cecco Olio Extra Vergine di Oliva "Classico". It was created for consumers who are looking for a mild, delicate flavour in an oil that is not intrusive.
With its low acidity, clear straw-yellow colour and slightly almond flavour, this oil is ideal for cooking, blending perfectly with the finest of dishes.
IN THE KITCHEN: It is ideal for cooking food (both in the oven and fried). Excellent for preparing sauces, preserving in oil, mayonnaise and as an ingredient for cakes and pizzas.

Our method
Attention, care, experience, quality at every stage: from our mill to your table.
The milling
We have been millers for almost two centuries: way back in 1831, Don Nicola De Cecco was already producing “the best flour in the county” in his mill. To this day, we grind all the wheat in our own mill next to the pasta factory, floating with intense and delicious aromas.
The dough
Cold water and dough at a temperature of less than 15 degrees: two details allowing us to produce pasta that fully respects the primary material.
Drawing

Drying
Another of the secrets behind our pasta is slow drying at low temperature. It is our way of keeping the sensory properties of the wheat intact.

Fruttato
Olio Extra Vergine di Oliva
The cold-extracted extra-virgin olive oil, “Fruttato”, is also the result of expert selection processes put in place by the De Cecco family.
Fruttato comes from a blend of high quality olives, harvested slightly before ripening; green in colour with golden-yellow highlights, it’s the perfect solution to enhance your stronger flavour dishes.
USES: perfect when drizzled straight onto bruschette, salads, carpaccio, grilled meats and hot soups.

A superior grade olive oil obtained directly from olives and exclusively by mechanical means.
