Yellow corn, white corn, rice and brown rice all contribute to this innovative mixture of grains that makes De Cecco gluten-free pasta rich in taste, varied and balanced with an intense aroma. In De Cecco’s Gluten-Free Linguine al Pesto, you will find all the taste and intense flavour that the traditional Ligurian dish demands. It is also delicious with a simple dressing of butter and sage, or a fresh tomato sauce, with vegetables and aromatic herbs, or quick spicy sauces with extra-virgin olive oil, garlic, chilli pepper and anchovies. The bronze-drawing process adds porosity to the pasta, allowing it to fully absorb the taste of the sauces for delicious dishes that are natural sources of fibre. Available in 400 g packs.

Selecting the wheat

Selecting excellent primary materials is the first step, the most important one in fact, in creating unique pasta.

The milling

We have been millers for almost two centuries: way back in 1831, Don Nicola De Cecco was already producing “the best flour in the county” in his mill. To this day, we grind all the wheat in our own mill next to the pasta factory, floating with intense and delicious aromas.

Cold water and dough at a temperature of less than 15 degrees: two details allowing us to produce pasta that fully respects the primary material.

Another of the secrets behind our pasta is slow drying at low temperature. It is our way of keeping the sensory properties of the wheat intact.
